My step father was an Italian restauranteur and had a copy of this same book in Italian throughout his career. He even had it rebound a few years back. During his life he ran a hotel in Rome and cooked for cardinals that came there from the vatican using recipes from the Silver spoon.

I was therefore thrilled when this came out in English and so far have bought 3 copies so that both my daughters have them for their homes. They use them daily. Not only is this the authentic cookery book for Italian food lovers it is amazingly economical, utilising seasonal fresh foods and not that many ingredients unlike so many newer recipes.

Mr. Wallace has produced a great read that is interesting from a historical prospective while it harpoons the very wealthy whose pursuit of money is no longer satisfying. Nope, these folks have to pursue a type of collectable that they cannot have any provenance for, which experts in the field can only hope to guess at what the bottle contains. Wine that is a century younger than the bottle on the book cover might at best be "recognizable as wine", unless of course it has become an ingredient for salad dressing.

The central charlatan in this tale is a master at exploiting the wishes of collectors and even the experts that should know better. Or perhaps that do know better and just let their own egos persuade them that in spite of zero evidence the ... Read More:

This is a gorgeous book - an absolute joy - and I wish I'd bought it years ago. (The price had always put me off but as far as I am concerned now, it is an investment - and had I known then what I know now, I would have bought fewer 'other' books and used the money saved to buy this one.) It is an absolute mine of information, and if you're interested in food, as I am (and you must be, or you wouldn't be reading this..), I am sure you will find yourself 'dipping' into this book constantly - it makes fascinating reading, and this version is beautifully presented. The pages are crammed with many tempting recipes - certainly, some of these are complicated and more suited to a professional chef, and perhaps this would not be the best choice for a 'first cookbook' for ... The introduction to this book sets the scene of the wartime kitchen and beyond during rationing, and continues with reproductions of wartime leaflets. For content I would have given this book five stars but marked it down by one since I found some of the reproductions rather difficult to read due to poor quality - even with my super new reading glasses.

This book is not just a nostalgic look at the past but contains valuable nutritional advice which is as applicable today with the range of foods available to us as it was then.

I bought this book hoping to learn some hard science behind cooking and I'm very disappointed. The book consists mostly of anecdotes of what scientists from Dijon found in one kind of wine/cheese/meat or another but hardly any of this can be extrapolated to everyday cooking and it doesn't give any sort of a big picture view on food - just a lot of details.

The book also contains a few interesting ideas, especially on non-traditional emulsions/foams/suspensions/gels - in particular chapter 97 "Everything Chocolate" is very interesting.

Overall I'd suggest buying another book. It's pleasant to read but amount of useful or enlightening content is quite low.

This is the second book of the series, and as ever is fantastic. The book is slighty more advanced than the first is is packed full of very useful and help step by step tips. There are sections all about chocolate, embroidery, making flowers, recipes, runouts, figure piping, bas relief, marzipan....I could go on because the techniques are endless. A must have for a cake maker or someone who just wants to try different methods and styles.
