This is the second book of the series, and as ever is fantastic. The book is slighty more advanced than the first is is packed full of very useful and help step by step tips. There are sections all about chocolate, embroidery, making flowers, recipes, runouts, figure piping, bas relief, marzipan....I could go on because the techniques are endless. A must have for a cake maker or someone who just wants to try different methods and styles.

Any aspiring young person who wishes to join the catering profession should have a copy of this book. It is thorough, well researched, modern and expresses all the values which surround the British Culinary Arts tradition. This is a valuable edition to any ones cookery book collection. well, i'm glad i bought this book on the recommendations of the other reviewers at amazon. mcgee explains the science of food and cooking in an astonishingly easy to understand way. everything from milk, its components and why it curdles, to meat and how animals are slaughtered and why they are hung, is discussed thoroughly, but in a manner that is non-dry or -dustily academic. absolutely well worth the money.

however, you may wish to await the new edition out in october 2004. i've emailed the publishers to ask if this is an undated british version or merely a reprint but they have declined to reply. perhaps amazon can find out and add the information to their description.

I agree with most of the above comments on this book. It certainly opened my eyes to the exhaustive process of wine making and French Beaurocracy! I certainly shall not quibble about the price of a good wine again!!!

Patricia is a complete inspiration and a very good writer.

I am so pleased to see (from her website) that she appears to be going from strength to strength.

She describes the people in this book so well that when there is a death, you feel it, and the news that one in particular died made me cry.

I shall certainly be buying her next book.

I found this book a little disappointing compared to Lindy Smiths other books, I was expecting more exciting cakes. There are only 15 cakes in the book and they cover lots of different themes. I do think the cakes would be easy for a novice decorator to create though so if you are new to decorating this may be a good book to have on your book shelf.
