What a smashing little book.I came across this book ten years ago,but nothing has changed since then. We put food in the oven,in it's raw state,and take it out ready to eat,and it's as simple as that. Well this simple( fantastic paperback),will show you how to do just that. I do enjoy seeing the tv chefs at work.what I dont enjoy,is the judges complainig,when it's the wrong colour.Don't they know there are people starving to death in the world. Well no matter what the colour,this book will have you feeding yourself in no time. When my wife died,all my mates said,!You wont manage to cook for yourself!.Well had it not been for this book,they may have been right.

I bought this book on eBay and found myself in proud possession of a hardcover `second edition' reprint from 1965. (I have no idea if the current version is updated or even converted to metric, sorry).
Elizabeth is a darling ! and definitely the first English Domestic Goddess, long before Nigella et al came onto the scene. Her delivery of these many, many regional recipes is neither as school madam-ish as early Delia, nor as infuriatingly chummy as Jamie-the-mockeny-Oliver. She engages us in such a way as to make one really believe that nobody cooks like the French, but at the same time that anyone can recreate this culinary wonderland here in grey old England.
This book is so much more than a list of recipes, it is an adventure in France. ... Read More:

As a Professional chef, I am pleased that I can still find books that are truly inspirational and helpful. If you need to learn basic fish teqniques then this book you should buy. Rick knows what he's talking about especially when it comes to fish.
The book is divided into 3 parts. It starts with easy step by step techniques with photos of how to prep, cut and cook a variety of fish. The second part gives you recipes to try when you have mastered the techiques and then follows the third part which is gives detailed information and diagrams of fish varieties complete with their latin names.
I truly recommend this book for anybody who wants to learn new skills whether professional or amateur. It has helped me when producing new menus

I bought this book several years ago (when it was first published) and I have to say I use it every single week, multiple times a week. My families favourite recipes are out of this cookbook and my husband doesn't even know he's eating "diet" food. The Orange-crumbed chicken is fabulous. Together, my husband and I have lost over 50 lbs and are still working on losing more. We can do it long term only with cookbooks like this. Sure wish they would published another one as we've tried every single recipe in the book. Only a few of the recipes were "failures" (didn't suit our tastebuds).
